Don’t you just love a meal that the whole family will eat? No one complains. No one refuses to it, AND IT’S HEALTHY!
This Curry Chicken Zoodle recipe is crazy flavourful and a big hit around here! Loaded with good-for-you ingredients like apple cider vinegar, chicken, and lots of zucchini. This simple recipe can be whipped up in 20 minutes for a quick and easy weeknight meal.
100g Chicken mince
1 medium tomato
1 spring onion
1 large zucchini
1 tbsp tamari
1 tbsp apple cider vinegar
1 tbsp curry powder
Coriander to garnish
Make zucchini noodles and place in a bowl
In a hot, non-stick pan cook chicken mince for a minute until sealed and breaking apart
Add 100ml water, chopped tomato and spring onion, cook for 2 minutes
Add tamari, apple cider vinegar and curry powder and cook until sauce thickens.
Season with salt, pepper and serve on top of zoodles. Garnish and Enjoy!
